Sanding paver joints is primarily to help control weeds and to add aesthetic value.  Contrary to popular belief it’s primary purpose is not to stabilize pavers (the primary  cause of moving pavers is the breakdown of the concrete border).

You can walk on the newly sealed pavers when they no longer feel tacky or sticky (this  will happen faster in areas that are getting direct sun and slower in shady areas). Wait  48 – 72 hours after sealing before driving on pavers. Typically you can put furniture  back within 24 hours (the exception to this rule are rugs and other items that air can’t  circulate under like storage bins – for these wait 72 hours).
